Calavacita.... the perfect summer/fall meal. Fresh from the garden veggies would make it so whimsical, but frozen and from your favorite grocer will do just fine!

  • Pork, loin chops, cut into cubes
  • Garlic, fresh cloves pressed or diced
  • Olive Oil
  • Zucchini Squash, cut into slices or half slices
  • Corn, I like frozen
  • Can of Diced Tomatoes, do not drain the juice
  • Cooked Rice, I LOVE Jasmine rice... and please, it's all about the rice cooker
Saute pork cubes in oil until browned and cooked through, add garlic. Cook and stir for another minute or so. Add squash, corn and can of tomatoes. Stir, cover and simmer for 20-30 minutes until flavors blend and squash is tender. Serve over rice.
