Low-Lactose Basic Alfredo

Cooking for Lactards (a.k.a. lactose intolerant individuals) can be pretty tricky, especially if you like alfredo, so here's my solution as well as the base for many good (and bad) dinner experiments, because let's face it... I have too many issues with control to stick to a 30-day menu.... I long to be freeeeee.... :)















The Ingredients:
1/4 c. Butter (marg. works, but butter's better)
1/4 c. Flour
2-3 cloves of Garlic (pressed, please :)
4 c. Chicken Broth
1/4-1/2 c. Parmesan Cheese (ok, not lactose free, but don't tell my husband)
1-2 c. Peas (unless you're weird about veggies in your main dish)
Chicken (I've been lazy and used the canned stuff lately... not too bad)
Pasta, cooked to your al dente desires











Instructions:
Melt butter over medium heat. Add flour and whisk (gotta' love cilicon-covered whisks). Slowly add broth a few tablespoons at a time and mix into it well so you don't get lumps. Bring to a good boil to thicken it up a bit then add peas. You can either add chicken now or put chicken over the pasta and then poor the sauce over the both of them.
